I don't know what you mean by disarming the grinder. Unless you are talking about using the bypass.
If that is the case there is a button on the panel that has waht looks like a scoop. Push that button and put a scoop in the bypass door and then push the button for what cup size you whant.
Regarding the taste of the coffee. It may need a cleaning and service. Try googling "saeco repair" and find an authroized Saeco repair center and have a good service done on it.

If you leave the machine for a while, the residual ground beans in the grinder stick and clog the grinder.

After taking apart the grinder and cleaning it out, it still didn't grind. -
Then we ran some ground beans through it a couple of times, and then put fresh whole beans on top of the preground, and it took.

Hi sad_loser Your problem is easier. On the top left side of the brew unit is a thumbscrew that holds the filter screen in the brew head. See if you push down on the thumbscrew you can get the filter screen to move? If it dose pull down on the filter screen and see if it will come out. If it does there will be an extra nut on the screw end and that needs to be removed and you need to order a new thumbscrew. That is why we call it a thumbscrew. It only has to be finger tight. The key is only for removing.
