Could someone help me with how to make coconut ice cream, I tried it and it cam out very hard and brittle. I don't have a manual for it so I am guessing that will help me. Can anyone give me a scanned copy or an abridged version of the manual???

It is possible that your viscosity is set too cold. You should check the temperature of your product to see if it is too cold. Is the Ice Cream hard? It sounds like maybe the beater overload is tripping. Some of the overloads can reset on their own. If you have and know how to use an ammeter, it would be beneficial to check the amp draw of the beater motor to determine if you are exceeding the overload or not. Ice cream is generally good at a temp between 16 and 20 degrees F. Temps vary with product and product brands. I hope this information helps, it is hard to determine exact problem without being there.
Is this a one gallon or 6 qt electric or hand crank ice cream maker that you are talking about? Are you looking for ice cream recipe or do you want to know how to freeze?

3 cans fat free evaporated milk 1 quart fat free half and half 1 quart whipping cream 1 cup Splenda vanilla to taste
Mix all together. Follow directions for electric ice cream maker. Makes 1 gallon. To make chocolate ice cream, add sugar free chocolate syrup in recipe.
I received the same ice cream maker as a gift via a yard sale. It had a single page photo copied out the original manual included with it. Very basic instructions, but it works. I can send you a pdf. of the page that I have.

i have a rival 8704 4 qt icecream maker,,when i made ice cream fior the first time,,the manual does not tell me what to add to my maker before it starts to churn,,i need to find a way to have someone show me exactly what to add for ingrediants and show me step by step how to make my icecream.like>>none said to add milk or cream to icecream mixture

It sounds to me like everything should work, but you put something in the ingredients which affected the result - salty or hard or softened water might be a problem - also insufficient rinsing of any detergent you might have used.
try different ingredients.
Also get a thermometer and check the temperature of your freezer - the problem may be that the freezer is only hitting a couple of degrees below zero celcius. about -8c or more should be enough for your ice cream maker, more is better for your frozen food check your freezer manual for details - please post again if you need this.
