On the ceiling in walk-in freezer around the fan area drops of water frozen

That tells me that when the evaporator defrost the water condensate is not draining to the outside of your freezer. You will need to find the drain blockage, Thanks Sea Breeze

I would first try turning the temperature down on your freezer before considering buying any parts. Your ice is freezing before it is reaching the position to dump in the bin. Also, if you have any items packed around the area where you ice maker is, try to free up a little space around it. If that does not work I would call the manufacturer, they will be more than happy to walk you through any problems you may be having with there products.

The coil in the conditioned space is called the evaporator.
If the water droplets are forming on the ceiling around the evap, it is due, most likely, to the defrost cycle being too long.
Defrost cycle: compressor stops, evap fans stop, electric heaters in the evap come on to clear any ice/ frost on evap fins/ coil.
The ice/ frost melts and some of it turns into vapor. As it hits the cold ceiling surface, it condensates into water droplets. Defrost cycle could be too long. Usually 4 time aday and no longer than 30 minutes should be enough unless there is high humidity.
There could be another cause.
Normally, after a defrost cycle terminates, the evap fans do not come on, due to a delay control. This prevents circulating warm are due to the heaters. The compressor comes on and cools the evap down to, usually 20 degrees or so, and then the fans come on. What could be happening is, the fans are coming on too early and blowing the water driplet off the evap and onto the back wall of the unit.
A third item, is to be sure that the condensate drain is "P" trapped. The prevents warm, outside air from being drawn in and causing exess frost build up, thus excess water and vapor.

As long as the temp. stays around 5+ or 5- of 0 degrees everything should be okay.

No choice but to move your food to a secondary unit & defrost the walk-in. If you go chipping around your condenser you risk more damage. Hopefully you have seperate breakers for you walk-in vs other cold storage areas.

You should check for air leaks around the door gasket or any other openings in the compartment such as where pipes or wiring is going through the wall. It sounds like a moisture problem from moisture being drawn into the compartment pass door gaskets or access holes.

First, call Restaurant Parts and More (1-888-814-1110) and ask for Rick. He can help either get you the seal or have one custom made. I've used him for 15 years with great success. If you have model and serial, it would be even greater.
He can do the same for the heaters that go around the door frame.

Don't understand which "Line" you are referring to. In alot of cases, the drain on the drain pan is clogged. This causes water to overflow onto the floor. The drain can be clogged from trash getting into it. Most of the time, the drain heater is either not working or not ever installed. Water refreezes in drain line and causes the overflowing problem.
If this does not help, let me know. Clear up the "Line "question and maybe I can go alittle deeper into this.

The drain has most likely frozen over. It is at the bottom behind the back panel inside the freezer. You will need to remove all of the ice and run hot water down the drain until it is clear.

Yes if the evaporator drain is blocked or not attached correctly it causes the humidity to remain in the refridgerator. Just opening the door will cause the warm are to enter and cause the symtoms of rain if the water is not taken out the drain properly.Hope this helps JT

Sounds like your defrost sensor is not working the sensor should return the fan running and cooling after it senses 50 degrees in the condensor housing unplug the sensor and check if it shows a closed circuit. First unplug the freezer for your safety
