Anejo, meaning vintage, is aged tequila. This particular type of tequila is aged in oak barrels for a minimum of one year. This type of tequila is generally darker in color, smooth drinking and contain complex flavors.

Silver/white tequila is bottled right after the distillation stage. Gold tequila is also not left to mature, rather certain coloring or flavoring agents are added (such as caramel coloring, oak tree extracts, or sugar syrup) prior to the bottling process.

Tequila is made through a 6-step process:

• Cooking and milling

• Fermentation

• Distillation

• Aging

I have just bought a Tequila, and though I love it, I know what you mean. The problem is that the stern keel doesn't sit low enough when 2 people are on board. In duo config, with 1 person sitting aft, it handles fine, since the stern keel is more submerged.
I am working on a fixed rudder/skeg. Will post when I am successful.
