Ice wines are manufactured in cold climates, most often Germany or parts of Canada. To make an ice wine, grapes are left on the vine until they start to become raisins and then freeze. Timing of harvest (in relation to climate) is very crucial in the process of making ice wines. Temperatures of -7C or below are needed to produce a good quality ice wine. The combination of the overripe grapes with the concentration leftover from removing excess water from frozen grapes results in a sweet tasting wine.
