My rebel canon camera doesn't show up on screen when taking pictures only after I take them

I presume you're asking about a Digital Rebel and not a 35mm film Rebel (as per the question heading).

If so, that's probably normal. It's only relatively recent dSLR models which have a "live preview" facility (often wrongly called "live view"). The whole point of an SLR is that the viewfinder is the main compositional viewing tool; the LCD is there solely to display and adjust camera functions and to review images already captured.

Most current and recent SLR's now have live preview, and all true SLR's are incapable of viewing the image at the actual moment of image capture as the viewfinder mirror must flip up out of the way of the image sensor.

If you want live preview then you must change your camera. if you tend not to use the viewfinder anyway then consider mirrorless Compact System Cameras such as the Olympus and Panasonic Micro Four Thirds models as they do have a true live view capability and the LCD is the main (or only) tool for composing images. Panasonic also have their regular Four Thirds G range, which look like an SLR but have an electronic viewfinder and they are also capable of true live view.

Should the LCD screen show what I am taking a picture of? I can review it afterwards.

Your camera is a DSLR with a mirror prism, so when you look through the viewfinder you are seeing the scene as what it is much like looking through a pair of glasses. To have "Live View" what you would be looking at is a digital image of what the camera is pointed at. That's a pretty simple explanation but one the DSLR is optical where as the Live View is a digital image. What you have is an entry level DSLR camera much the same as professional photographers use. I use both types and they both have their place but when I'm shooting for the ultimate image for print I'm looking through the viewfinder not a live view.

LCD is not displaying

I am not familiar with this particular camera, but if there is any other form of viewfinder on it, there is probably a way to switch the picture back and forth from the LCD display to the viewfinder. Personally I would not buy a camera without a viewfinder, but right now, the only companies who make cameras with an optical viewfinder are Canon and Sony, and even they are getting away from it! Shame on them!

The other type of viewfinder that works well is the type that reads the CCR image onto a smaller screen to use as a viewfinder, like my Kodak Z712, or the Nikon P-80, I think it is, with the 18X Zoom.

One of my issues is that I like to take available light photos outdoors at night, and the LCD screen simply is not bright enough to show the image, even though the camera is able to make a decent photograph in that light.

Most cameras will let you shut the LCD screen off to save battery power, so you will have to find out what every button on the camera will do, and make sure that the screen is powered on. It may also be that you have to recharge or replace the battery in order to have enough power to turn the screen on.

Of course, as we say in the computer world, RTFM! Most of your questions will be covered in the manual, so read it from cover to cover, with the camera in front of you. I was a freelance photojournalist for two decades, and trust me, there are still things I won't know about a new camera without either reading the manual, or experimenting.
