I think you refer to the steam sensor. I,ll explain how it works with one of its uses. Say you want to reheat a plate of food. You can do this two ways. You can guess how much time it will take to warm the food, and maybe not heat it enough or overcook it which can ruin some foods. Or you can just press the "reheat" button. The oven will come on at full power and continue to operate until steam begins to rise from the plate. The oven then switches to a "countdown" mode until it determines the food is hot. Saves time and guesswork. Most modern ovens work like this. Since you dont give the make and model of your oven, this is the best I can do.
