The only way to use less water in a washing machine is to turn your settings down to medium or small load, this is false economy as it takes more loads of laundry to get the job done,,To use your washer to its full economy, do full loads of laundry.
The washer requires a set amount of water to run,any less and you are not going to be happy with the results.
If you have the financial resources, you can install a water reclamation system, this will save and filter and then re-use the water again and again.

How long should the heavy wash cycle run? I have been using the regular cycle but decided to use the heavy duty when washing the filters from my range hood. Should it take over 2 hours?

The heavy cycle typically takes a long time because it includes a short soak and prewash. The older hot fill washers were quicker but used more water while the newer cold fill washers are claimed to use a third less water and so need to take longer over the wash.

The heating of the water also adds time to the cycle. Modern detergents work best, the manufacturers claim, with a rising temperature.

Kenmore washer - water won't drain. It stops

If the water drains between the wash and rinse cycles, your motor and pump are probably OK. If this is a machine with a dial, try a different cycle, like normal instead of heavy duty. If that works and the machine completes the entire cycle then the timer probably has a bad spot. You might try to find a replacement timer if that is the case although I didn't have any luck with my 10 year old washing machine. Best of luck

MAF18-MC4VS heavy duty laundry machine

You cannot. There is a pressure switch that measures the weight of the water before moving on to the next cycle.
