Some tables can be adjusted and you can choose the height according to your chair and your personal height. Other tables are not adjustable and these are usually about 30-37 inches from the floor.
There should be screws/knobs at the table base. I've also seen these at the front legs of the table. You have to loosen the knobs, adjust the height and then tighten the knobs once you are happy with the height.
There are no minimum sizes. Changing tables come in all shapes, heights and sizes and it is up to you. You should try matching the table to your size especially if you are very tall or short. It also depends on how big is your baby's room, don't take a huge table if the room is small. I think the average sizes should be: 47" x 20" x 41"
