That pretty much sounds like a weak igniter thats causing your troubles, while the igniter first comes on to preheat the oven its seems to be ok,yet once it has been on for a while the igniter is getting weak and not allowing the gas to flow properly once its hot. By replacing the igniter the oven will maintain tempature.

Model # 36275621302 stove not maintaining proper temperature. Takes long to bake. Broiler comes on ok. Bottom burner gas comes on and ignites in preheat but then the igniter glows hot but the gas doesn't...

The problem is usually the igniter not reaching the correct amp draw .When the igniter does not reach the correct amp draw it may allow the gas valve to partially open or not open at all. The igniters are inexpensive and easy to replace. This video will walk you thru the correct procedure for testing an oven igniter. It may be a different model but the testing will be the same.You can also enter your model # for diagrams and illustrations of your specific model. Not all models are available. All parts come with installation instructions.

Oven gets up to correct temperature but sometimes fails to maintain temperature. [does not re-light sometimes] sears kenmore model #362.75621300

sounds as if your bake igniotr has gone , or is going bad, if you remove the lower tra in oven cavity it will expose the "glow coil ignitor" after removing the power source you can unscrew and remove the ignitor form the burner bar and bring to local repair company for replacement ignitor, 50-90 bucks depending on which part it is, essy enought repair

Kenmore SF367.....Contantly relighting during cooking?

This is a normal function of your gas range. I own a similar model and it operates the same way. The gas is not required to be on continuously to maintain the oven temperature and will relight periodically when the internal temperature drops below the prescribed set level.
