Once you've taken the picture, the date stamp is just more pixels, exactly as if you've taken a picture of a sign with the date on it. Just as a sign hides what's behind it, the date stamp covers whatever was there.
You can use a photo editing program to remove it the same way as removing any unwanted object in the picture. You can crop the picture, or use a cloning tool to try to extend the background to cover the date.

Press Menu, scroll down to "Date stamp" and across to select off, date or date and time, then press menu again. The date stamp only works in Postcard mode, so if you set a different picture resolution, that will also stop the pictures being date stamped.
to keep the date on, you have to leave the camera off with a charged battery for 24 hous to charge the inner battery that keeps date on. If this doesn´t solve the problem then is because the inner battery won´t charge anymore, but it will take pictures as normal without the date. To avoid this don´t leave the camera too long without use or with a worn battery.
According to page 33 of the manual, the date/time stamp can only be embedded in the image in the Postcard mode. Set the image size (L, M1, M2, M3, S, Postcard) to Postcard.
Try removing battery from camera then wait 10 seconds before installing. This action resets camera.
If no work, locate your camera software version. Procedure should be in manual, else could probably find it in a google search. Then locate latest version with a google search, or panasonic camera website, or call to customer service and ask.
It you do not have latest version, ask customer service how to download it.
Set the resolution to PostageCard (1600x1200). Many of these cameras have only ONE RESOLUTION setting which allows you to have a date/ date and time stamp on the file, which will print on the viewed or printed photo.
How to do it: Turn the camera on M mode. Use the func. set. go down the menu to the resolution settings. (on the bottom of menu). Pick only the postagecard (1600x1200) setting.
I also was like you, and had an awful time with a camera I was fixing. I then looked it up on the Net and found an online user manual for the Canon SD 500, which should be basically the same.
One reason why the date stamp is not showing would be that you have not set the system date/time. The date/time resets everytime you take out the battery.
