Need a manual for west Bend Bakers choice plus 1

I need to know if the dough cycle has to rise at least once in the machine and then one more time before baking

When my machine goes into the next to the last rise I have a loaf about 5' but then when it goes into the last rise before it bakes it never rises high again. The finished loaf is about 3 1/2" high....

Not fully understanding this but it sounds like you are opening the lid too much and spoiling the rise. Only open the lid when at the dough stage if necessary.
Bread will not keep warm, it will steam and go wet and soft in the pan. Open the lid when the cycle has finished and remove the loaf.
Try re-setting your machine by holding down the start button till the display goes out.

On Westbend Bakers Choice one of the paddles is binding up. Dont see any way to lubricate or take apart to clean inside. Is there something I am missing?

Hi, You are not missing anything. The sealed bearing is starting to fail. Eventually the paddle will freeze up and you will need a new bread pan. Sorry Hank
