This is an old old TV and when our newer one broke we dug it out of storage as a replacement. It worked 100% fine when we put it in the garage. However, now when we turn it on the picture and sound comes on, but after a few seconds the picture goes away, but the sound remains.

Hi, If lamp has not been replaced in tv in last 2-3 years, then replace the lamp as symptom shows that lamp has reached to end of its working life span and causing that problem. Lamp is not dead or broke but weak so you get above said problem in tv. Thanks.
It seems that the "backlight" has gone bad. "Backlight" is the device that allows to see the picture in an LCD TV, when they are about to go bad the symptom that you describe is very usual. It depends on the tv manufacturers and model to expect how long the "backlight" is going to last in a tv.You can shop around for a replacement part and try to do it yourself or take it to an especialized technician. If it is only a few days over the warranty call immedieatly, if it is much over that then these newer Hitachis are in my opinion not worth repair, and I mean the newer under $1000 units the parts are near the origianl cost sometimes.
It is not clear where you say input is from cable, do you mean the Scart input to your Sony TV?
Do not use Progressive scan(p), as this is not interlaced. The normal TV requires an interlaced(i) picture of 50 half frames per second giving 25 complete pictures per second to reduce flicker.
Some TVs and projectors and all monitors accept Progressive scan.
