I would expect the problem with the Capture perfect fike size is down to the compression chosen for the output file. Ideally black and white inahes should be Group 4 TIFFs and Colour or Greyscale should be JPEG.
Alternatively you may want to check the scanner is set to 'scan ahead' in the twain settings in Acrobat. If it is set to anything else the scanner will slow down to allow the PC to process every image. With 'Scan Ahead' turned on the scanners memeory buffer the PC speed a little giving you faster scanning.
Try 'page-counting', if this works, the scanner is okay. Fan the documents and loosen them, ensure the end touching the roller is crisp and not bent/folded. You can also try a different set of documents to eliminate paper related problem.

A 'Driver' is only the software portion to connect two hardwares. You need to install a printer driver for Printer, or a DVD driver for a DVD drive. Similarly, the scanner driver just connects the scanner to the computer.
You need to use a Scanning software to use the scanner. Canon offers CapturePerfect 3, using which you scan documents, do rotation, convert to PDF etc. CP3 has option to detect the page size. CP2 is available free of cost from Canon sites. CP3 comes with the scanner.

If you have it set to certain paper weights or manual feed that is all you will get. Change the settings from the printer monitor back to normal weight paper or text not high quality graphics and it should feed again.
I havent used Canon 2580C and hence cant comment on Scan Panel. But you can download SU5000 or Captureperfect 2.0 from Canon website (http://software.canon-europe.com/). This is easy to use and probably offers more features as compared to ScanPanel. Canon 5010C is a higher model as compared to 2589C and Captureperfect may offer better user interface.

Grey as you know is different shades of black. Uncompressed TIF can store this information. Compressed TIFF is not designed for this. Compressed TIFF is for blck & white only. Try JPG option. JPG can compress Color & Grey. For pure black & white chose TIFF compression.
