Shortening chairs is a very delicate process but can be doneif you have the right tools. You can usean electric sander to shave off length, one leg at a time. Once you are satisfied that they legs are allthe same length, you can cover them with protective pads.

I need to buy a high chair for my son but out kitchen is super modern in design and I don't want to stick a huge plastic eyesore in there. Any ideas?

I too have a tiny kitchen and ran into the same problems. I had barely any space to fit an extra chair into the equation. So, I found a SpaceSaver highchair. I really hope this is what you are looking for because I really love it.

How much room should I leave between chairs in my kitchen?

In order to make the seating comfortable for your diners,each chair should be at least 20 inches apart. Keep in mind that your guests will need to be able to access their seatand be able to leave without squishing themselves too much. I would say the ideal length between chairsis about 30 inches.

How do I keep my dining room chairs from scraping my parquet floors?

You have a few options to keep you chairs form scrappingyour floor. Although not necessarily astaticallypleasing, you could put an area rug under your table and chairs. The most popular remedy is little plasticdiscs that use self-adhesive to attach to the legs of the chair. You can also get "fabric backed coaster cups"which are little bits of fabric that are attached to the legs. The other option is clear plastic mats thatthe chairs sit on top of (like for swivel chairs in offices.)
