That is usually a sign that the spark module has gone out and needs replacing. This is only if the clicking continues after all the burners are in the off position

Might be the PC board, or it might just be the switch behind the oven knob - try disconnecting the wire leading to that switch and see if the clicking stops. If it does, the switch is bad. If not, suspect the electronics.

We have a 5 burner GE Profile oventop. The clicking from the electric starter doesn't stop unless we unplug the unit. Any suggestions on how to get the clicking to stop?

You have a short in one of the contacts on one of the controls.  Remove the cover to the cooktop.  Visually inspect.  If necessary, disconnect the wires from the controls one at a time....they're all in parallel until you stop the symptom.  Be careful around the wiring...turn off power before touching any uninsulated wires.

This is caused by a bad flame sensor switch. It has a cap tube (copper line) coming from the pilot area to a switch with two wires on the backside.

Starter

Sounds like one of the control knobs got stuck or shorted in the start cycle. Can you get access to the inside where you can see each of the control knobs? Look for wiring and unplug one at a time. This may help you figure which one is shorted.

Gas Stove - Electric Starter

Just happened to me. I unplugged the electric starter, wiped up the water, took off burners, etc., and placed a fan over the stove. After about 3 hours, I plugged in starter and the clicking is no longer.

Automatic Ignition Oven Problem

Depending on the type of ignition used (sometimes they have pressure sensitive switchs other times its just a simple microswitch) the switch's may have gone but also can you hear a clicking but the burners / oven not lighting? if so then the electroeds on the appliance may just need cleaning if not then i would recommend getting an engineer out the repair its self should be pretty cheap
