On the last camping trip I ran into an issue of things freezing in the fridge, despite it being on the warmest setting. Once we got home, I turned the unit off and left if for a couple of weeks. Upon turning it back on, it cooled properly then began freezing items inside the refrigerator portion. The kids don't really care for ice in their milk. Any ideas?
The temperature control thermostat, alson known as the colds control thermostat has gone bad and basically isn't converting electrical/temperature signal properly and needs to be replaced.

in your refridgerator there is an internal thermostat on the cooling fan u can move up or down it should be placed on the last finn to the right looking at the fridge

To solve this problem, you must open the compressor area at the back bottom of the refrigerator and chek the temperature of the pressure line. If the temperature is between 55celcius to 60 than its ok. Or else you need to change the refrigerant.

u need to open the thermister up its located on the back on the fin also check to make sure u are getting full 12 volts to the fridge check the voltage at the fuse

Sounds like your ignition board is not working.
Aftermarket ones have a common automotive fuse.
Have a look at the following on line so you know what you are looking at in your unit.
Dinosaur electronice makes a UIB ( universal ignition board ) that will fit just about any fridge.
about $100 online. $250 where I tried to buy one at a rv place.
