In standby mode, the machine just wants to keep the product refrigerated until it goes back into auto.
So, the mix cabinet needs to keep the product cool in the bottom of the machine, that requires the mix compressor
to run. The mix cabinet temperature is read by a thermistor probe
and regulated by the (left side) logic board
The product in the cylinders should go back to liquid form in standby, but we still have to maintain that safe food temperature, the motor
will run periodically. If the machine is air-cooled a fan
will run anytime the compressors run. If it is water cooled, water will flow through the machine when the compressor runs. The temperature in the freezing cylinders is read by a different thermistor
probe and regulated by the logic boards
