I need to design my postcards but I'm not really familiar with any design software. I've heard of online companies doing design services and postcard printing but don't know where to find them.

Any printing lab that knows their maching can print the date on digital images by request. If they can't or won't accomodate this simple request, find another lab. In particular, the Fuji Frontier labs have this function readily available to the operator. They shouldn't charge you anything extra to do it, either, as it's only the press of 1 button.

To turn on the camera simply press the on/off button on the top of the camera.
to view information about when the photo was taken ect. press "disp" button, when your camera is in the display setting (blue triangle).

The PostCard size mode will not be available in the Digital Macro, Stitch Assist, or any of the Movie shooting modes. (See the last couple of pages of the manual for mode compatibility.)

Will Avery 5689 Postcards print on a 5610 HP Printer?
Most Avery products will print if you select their software to do the printing. It's a free download from their site. Your operating software for designing the postcard should have a "template" selection in the print menu which then lets you select either the Avery size or you can put in a custom size for the postcard.

Good luck, I've never heard of Black Diamond. I know that 40 years ago a company called "Happy Sewing Machine Company" was making branded sewing machines for companies like Montgomery Ward, Western Auto, etc. You might try giving the machine a once over to look for the word "happy" or a smilie on the underside.

I need to print 6"x11" postcards with some protective coating on it?
From what I know, most digital printers can't do that. Digital printing requires heat that may damage the coating. If you want, you can just buy ready to use papers with coating from the store and print them using your digital printer. But the other way to go about is to print postcards from a reliable printing company like PritnRunner. Yes, I think that's a better idea.. depending on how many you need, because the cost of your ink in your printer, may be alot more than actually getting them printed professionally by a printing company.
