there is normally a wiring diagram on the unit somewhere. on the back or behind one of the covers.
either way there is not much to it if is just a fridge. if there is no electric defrost then the only thing that will usually turn them off it the door switch - when you open the door the fan can go off and the light on- if it is more of a commercial type fridge then there is possibly a coil temp sensor (clixon) a little switch that reacts to the temp of the evaporator coil and will not let the fan come on until the coil reached a pre set temp.

if there is electric defrost (usually only on freezers but sometimes on fridges) then there will be a defrost timer. if this is the case then the compressor will turn off while the fan is off and heaters will warm up the coil.
if you just want to check the fan then grab a multimeter and do a basic continuity test between the 2 wires (not the earth wire) if you have a reading then most likely the fan is ok

There may be damaged or broken wire to the evaporator fan
There are two wires to the evaporator, one hot and one neutral Unplug and check the neutral against ground with a continuity tester if ok test the other wire in a non invasive fashion using a safety pin

The way you do is to insert the pin say at several points on the wire until you discover where the break is. Use alligator clips, one is to be connected at the connector of the fan hot wire ( The suspected wire that may be broken) With alligator connected at the end of the wire connector, insert the pin at different points to check wire integrity with an ohmmeter. Where there is no continuity, that is where the break would be.

If that does not work, you probably will have to run a new wire. Here is a hint: The evaporator fan runs only when the compressor is running. If you can extrapolate, you can find an alternate way to reconnect the evaporator fan and have your fridge running in no time.

Evaporator motors won't run

Normally, freezers have electric heaters that are energized during the defrost cycle. Once out of the defrost cycle, the refrigeration system comes on but the fans do not. This allows the evap to cool off and to prevent circulating warm air from the heaters. This is controlled by a fan delay switch. It is a small, round device that can have 2, 3, or 4 wires going to it, depending on the manufacturer. It is usually clipped on to the end of the evap coil on one of the "U" bends, near the top, inside one of the ends of the evap. Usually where all the electrial components are located. It come in several variations, but it's main function is to prevent the fans from energizing too early. Usually does not bring fans on till evap hits 20 or so degrees. Walk-in norlake freezer

Check the evaporator coil for frost buildup on the back. Check for frost on the suction line, the biggest line returning to the compressor. If frost is evident at these places you have a defrost system problem. These systems have a defrost timer that defrosts the coil at preset times. Check the timer for proper operation by marking the position of the dial and check back to see if it changes. If it does not change position the timer motor is most likely bad. If the dial is not rotating automatically you can manually turn the dial in the direction of the arrow and put it through a defrost cycle.

YES see if you have 12 volts dc at the evaperator motor if you do then the motor is bad if you do not then the mother board is bad and ge recomends in this case to also change the fan motor at the same time

How do turn the temp up on a norlake walkin?

They are usually mounted on the front panel of the evaporator or mounted on the wall behind the evaporator.There is a possibility that the temp. control is at the condenser,and the sensing bulb was slipped thru the wall.Look for the bulb at the back of the evaporator and follow the cap tube.
