You offer much opportunity for research and discussion.
This would be a good topic for the Tank forum as there are professional plumbers with specific and general expertise on different model numbers.

Fixya is not a forum since we parcel an answer, then move to next question.
Discussion is not common, and typically one person answers this question, and then that question is removed off the question board.
If you are wishing to diagnose pilot light yourself, assuming product is not defective, and you are not already professional in the field, then following links offer resource:

AO Smith 2012 water heater model GCV 40 300 pilot lights but then goes out. Won't stay lit

You only need the thermocouple replacing. It is the safety valve that won't let the main burner light unless the pilot is fully lit. As it is gas, you should have a gas certified technician replace it.

Lowe's hot water heater pilot light will not stay

Hi,

If it is one of the new ones with the fancy gas control and the blinking light... does the light blink?? or not??
If it is blinking then the pilot should stay lit...
If it will not blink then the sensor is bad or not in the right place...

Or... the gas control is bad... this is happening alot...

If it is brand new... take it back...

Pilot light will not stay lit.

More than likely the thermal couple is defective. The thermal couple is a safety device that shuts the gas off if the pilot goes out. If it is defective the pilot light will not stay lit. The thermal couple is the device that the small copper line goes to. It is mounted beside the pilot flame and the flame much touch the TC for it to work. If the flame is not touching the TC bend it until it is in the flame. If it is touching the TC then replace it.

I can light the pilot and the burner will come on, but it won't stay lit. I bought a new pilot assembly and installed it. the burner and the pilot light still won't stay lit. This is the unit that...

Most gas water heater problems can be solved by having service technician perform yearly maintenance. Or by doing maintenance yourself.
This maintenance includes cleaning burner parts and combustion chamber, checking gas pressure and supply, bleeding air out of gas line, checking vent draft, making sure air supply is adequate and not exposed to chemicals, cleaning air intake. Also adjusting flame sensor so it is positioned correctly. If water heater is connected to electric circuit, the outlet must have correct polarity.

You can get gas to appliance indicates the gas control valve and water heater are not locked out. But the gas control valve thermostat can still be bad.

Pilot won't stay lit in Reliance 606 gas water heater

The Reliance 606 has an enclosed thermal couple. Before you try taking that assembly apart take a wire brush to the bottom opening directly under the burner. There is a metal filter on the very bottom of the water heater. It could be that the filter has gotten filled with dust or animal hair. It took a serviceman 2 days to figure this out for me. The water heater has to have good airflow through that filter to work well.
