How to hardwire a 3 wire wall to a 4 wire oven

Simply put, it won't work. New oven=white is neutral, black and red are power but not on the same "leg", and green is ground. If you use a meter, black and red should give you 208-230 or so volts. Wires from wall=White is neutral, blank is voltage (probably 120 or so volts) and bare copper is ground. The dual voltage plug can be used for either 125 or 250 volts, not both as required by the new oven. Need an new circuit pulled and wire/breaker matched to new oven power requirements.

How do I replace the bottom oven element on my Maytag CWE5800?

This shouldn't be too difficult. Make sure the power is off. Remove the screws that hold the oven element in place. carefully pull the element out from the back wall without losing the wires back in the holes. Install the wire on the new element push it back in the wall. Reinstall the screws and you are set. Turn the power back on and check to make sure the oven cycles when it reaches the set temperature.

My double electric wall oven smells like smoke, what can be the problem?

It depends o what kind of smoke. If it is just a burnt food smoke smell there is residue left on the walls that has refused to come off with cleaning and a harder detergent is required, perhaps allowed to soak for a longer time. If it is an electrical smoke smell, there is either a bad connection that is heating up and creating the smell or some wires hare carrying too great a load and are smouldering. Check the first item before looking at the next because that will require you to open the back of the oven to access the wires and contacts.

Excessive smoke comes out from oven when cooking

hmmm sounds a bit strange is there anything at the bottom of your oven that has been spilled on it even on the heating coils? (if electric) (if gas there could be a very serious problem with the oven that needs fixing right away!)

I am replacing a 4 prong cord which is red, white, black, green with a 3 prong all black cord. My stove is a Maytag which was originally wired with a 4 prong pigtail for use in a trailer. I want to replace...

Okay, without knowing everything I would need to know; here's what I propose you do. First of all, are you exchanging the same wire size cord (eg. #12 stranded wire for 20 amp, and #10 for 30 amp, #8 wire for 40 amp,  # 6 for 50 amp, and so on) for the same application (ie. 30 amp for dryer, and 50 amp for range, etc.) ?  Let's say you are, so what you want to do is take the 4 prong off (one by one), and write down the configuration and color, as you take off each wire. And then you're going to apply this to your 3-prong plug. So, without seeing the plug and its application - I'm going to explain to you how to wire this. First, put the black (hot leg) wire will go on one of the straight prongs - and the red (the other hot leg) wire will go on the other straight prong. Now cut the white wire down to about an inch, so it can fit into the plug when you're putting the cap back on. And remember to tape this white wire with electrical tape. This is for many reasons, but its basically for safety. Now, the remaining wire (green) goes to the right-angled prong - which is your ground wire. Now your wired for 240 volts, and depending on the size of the wire - your wire size shall be in accordance with the amperage that I explained earlier. Now make sure that your power is off at the panel before you plug this oven plug into the wall. Then, turn the breaker on, then off. If everything seems okay, plug the cord into the wall (with the oven off) - and then turn the breaker back on. Then proceed to turn your oven on from there, and then if everything checks out okay, then your good to go. Good Luck with this, and I hope this works out for you. If not, feel free to contact me again. - Jim

Smoke and fumes coming from oven

Sounds like you need to clean the whole oven as old grease and spillages will keep on burning and smoking.

I have a 1984 whirpool wall oven that is all in one with the mircowave. My problem is the self cleaning

Possible.  Be sure the latch is fully engaged.  It may need for you to overcome some resistance. There is an interlock switch will allow the function to enable.  If not...and if everything else is working...pull the switch and test it for continuity.
