There are exceptions to this. For example, adjusting the White Balance is not available in the 4K Photo mode. See page 197 of the Advanced User Manual: ftp://ftp.panasonic.com/camera/om/dmc-zs60_adv_en_om.pdf .

I use a Coolpix S9700, usually set on 'P.' I have always been able to change white balance using the menu, but white balance option is now greyed out, not available. I can't work out what I've done!

The only time I see WHITE BALANCE GREY is when your Picture Mode does not need it: When you are taking photos in B&W or monochrome or any mono color.

I could not found white balance in shooting mood

You can set the white balance only in one of the P, S, A, and M modes. In the point&shoot modes the camera will always automatically set the white balance (and just about everything else).
In one of the PSAM modes you can set the white balance in the Shooting menu. Full details are in the "White Balance (P, S, A, and M Modes)" section of the manual (page 70 in my copy).

When I shoot in arperture priority my photos come out blue. All ok in auto come. Canon d40x

The priority modes often give you more control over more features than auto mode does. In auto mode, the camera is deciding your white-balance, and may not let you select a white balance setting even if you wanted to. In aperture priority, your camera will give you control over white balance. Switch to aperture priority, then check your white-balance (wb) mode. You should still be able to select "auto" within these settings if you'd like, but feel free to play with the various settings to get your ideal photo. Good luck!

Custom white balance can only be set in P, Tv, Av, or M modes. The auto modes are, well, automatic. They are all preconfigured and intended for ease of use not configurability.

The pictures are too blue.

It sounds like a White Balancing problem. I'd guess if it's set on Auto WB, then you'll need to do it manually. Some digital cameras tend to produce that blue tint when left to white balance themselves.

If you don't understand completely let us know the exact model of the camera and I'm sure somebody can talk you through it!

white balance can only be manually configured on "PSM" modes only, the other modes set the white balance automatically .
