It should work fine. As long as the SAP client is 'multi-user' aware then you're good to go. One 'acid test' is to see if the SAP client will work on a Terminal Server or a Citrix Presentation server and in this case it does. The NComputing solution, conceptually at the application layer, behaves much like TS or Citrix, thus looking for those solutions is what you'll need to know for NComputing. Here is the website I found about how to setup specific INI files for Citrix to get the SAP client working. My recommendation would be to test as is out of the box with two NComputing seats, simultaneously. If that fails, then try the suggestions on this website: http://community.citrix.com/display/adi/SAP+GUI+7.10+on+Citrix+Presentation+Server.
As in like a Citrix solution for home? You can setup RDP through windows which is a remote connection to another system on your network. You can do this by clicking Start > Run then typing MSTSC and hitting okay. You can then type the name of the other computer and it should prompt you for credentials. You may need to do a bit of setup on the remote computer first, such as adding your network username and password into the remote users group (right click my computer, choose manage, local users and groups, groups
What device is hosting Citrix? (Maybe I should rephrase ... what computer is the LS2208 connected to and does it hold a citrix client)
Be advised that Citrix hosted on specialty devices like table pcs are finicky about the keyboard data timing (a synchronous operation)
Possibility #2 is power sag. When that scanner comes on it requires a lot of current, and often USB power (.5 amp max) isn't enough.
If you have a 15 foot USB cable on the scanner try a 6' striaght cable instead of one of the external power supply cables which provides a power pack and more power.
