8000 series manual shows 8141-00 is 120Volt:

I am not sure what the suffix b means, and there are always little differences.
The difference could be something simple like knockouts, or mounting bracket.
Wiring and operation should be same since the sell sheet doesn't list 8141-00b as different model.

To set paragon timer: Pull large round dial straight out towards you, then rotate dial until correct time is lined up with stationary 'pointer' on front of dial

Setting Defrost time, Place the start pins(screw pins) in the outer dial, at the time of day- When you want defrost to start. (8am-2pm-8am-2pm) 4 hours min. between hours.
Set the Time of Day, Grasp knob marked - Turn to set. rotate, until the correct time of day. Ever timer there is a power interuption, this will ahve to be re-set.
Depress and rotate the bronze pointer on the inner dial to the length of defrost wanted, - apx 30 minutes.

That unit is not made any longer. I hope that you have shut off the electricity before you started working on it. You may need to remove the whole motor timer assembly from the housing in order to get the time pointer set back into position
