Is there a auto/on switch for the fan? In auto it will only run when the condensing (outside unit) runs. If its in the on position it will run all the time. Also, possible bad thermostat stuck in on position. Check and see if the condenser unit is also running all the time.

Two common reasons for this.

1) valves weak/broken and pressure is leaking in from the high side of the system.

2) AC compressor is not running. Make sure the compressor is actually running. It has a low rumbling noise to it - and often you'll need to actually 'feel' the compressor for the vibration (of running). Or feel of the big copper line (it should be cool-cold) - or - feel the smaller of the two lines (warm to hot).

You are low on refrigerant and most likely have a small leak.

accumulating water is as you assumed - the air conditioner is taking the humidity from the space and the water is nothing other than condensation. I would not worry about it at all.

You need to start worrying if the unit 'doesn't' produce water.

I think those are your thermostat connections and are probably 24 vac. Check the output of the transformer and make sure it is 24 vac. If it isn't make sure power is supplied to the input of the transformer.

Try putting the temperature setting at the temperature that you actually want the room to be instead of a crazy temperature

Check filter
check system charge
If the above is ok you may have a restriction in your line set ex. kinked line,blocked metering device etc...
