Delfield r2fh 2 door fridge. all 3 evaporator motors are running backwards. system appears to have been worked on before, and ideas where i could find a schematic to confirm it is wired correctly?

Delfield bay marie M/N 18693pt S/N 65629M

very most likely overcharged on freon. With R-409-A, you can not charge by sight glass. Do the ambient plus 30 method if it is a txv. That will get you close. If it is a cap tube, charge to an evap temp of about 20 degrees. then watch it. Make sure it makes temp and shuts off.

can not immediately locate manual.
If this unit is a cooler, check this:

Anything that can effect air flow. Fans not running or running in wrong direction.
Too much product in unit.
Thermostat set too low or stickes and unit does not shut off unit.
Possibly has a defrost timer. Most coolers do not but some do. Look for one and see if it is working. Make a mark on the face and wait 15 minutes to see if it moves.
Drain pan clogged.
Doors not closing or seals not sealing.

these are the things to check out.

Delfield ColdPro Refrigerator, Commercial unit,

Intermittent failure of thermostat is the most likely problem.

Check the temp sensor to make sure it is clean.

You can check for voltage coming out of the thermostat when the unit is working improperly.

If the setting is on.... say, 36, the temp is... say, 26, and there is still voltage coming from the T-stat telling the compressor and fan motors to operate, then you have a bad T-stat/sensor.

Most T-stats for that type unit do not have a separate removable sensor, its all one part with a sensor on a long tube/wire.

You can probably buy one from your local refrigeration supply warehouse for less than 35 bucks.

If it were a more consistent problem, I would say you have clogged coils or low refrigerant. But if most times it works fine, and then just randomly will not shut off, that's likely a controls thing. = T-stat.

Need to repair a pluged cappilary tube

Your best bet is to order an OEM capillary tube and replace it. Of course this requires recovering the refrigerant. The likelihood of unplugging one is very very slim unless it is a very large bore tube.
