What is this HOBART piece?
If this is it, it is a speed drive. It increases the speed of an attachment hub 3 times the normal speed usually used with a 9" vegetable slicer.

Can I rewire a Hobart VCM-25 Mixer/Cutter 460v to run on 220/240v?
There is likely a nameplate with a wiring diagram inside. Without being familiar with the specific model, I can't tell you where. If you can find it, it will show both 460 and 230 volt configurations. Regardless, you will find inside the wiring box (where the conduit comes into the mixer) there are four wires corresponding to two windings - for 460 volts, the windings are wired in series. For 230 volts, they should be wired in parallel.

Why is my hobart mixer smoking?
The windings inside the motor are heating up from either a prolonged over load from too much or too thick ingredients in the bowl or there is a short in the motor. Either way Hobart has replacement parts available.

Polarity on the incoming line is incorrect. You will need to swap the red and black wire in the panel box. If you are not experienced with electricity have an electrician perform this for you..

Hobart three phase mixer is spinning the wrong way
Sounds like the polarity. Easily corrected by swapping the red and black position of the wires inside the plug. Make sure there are no other power sources feeding the unit before removing the plug.(the white and green wires should not be moved. Easy way to remember wiring a three phase plug. Most are labeled on the inside of the plug with GXYZ. G is always the green ground wire. X-red (Indians were here first), Y- white ( then came the white man) Z- black ( then the black man)

Accessing gearbox in Hobart N50 (older model)
Take the back cover off the motor and then there will be four nuts that
hold on the back bearing cage of the motor. After removing that, you
will find 7 large screws in beside the motor that remove the gearbox.
