The only thing you have to know is that pork and chicken cook at 325. Any baked goods with leavening in it cooks at 75 degrees less than what the recipes calls for but no lower than 275.

I have this oven and I'm very much afraid the fan motor is getting ready to go out on me (I've used this oven almost 30 years). If it does go out, I'll be willing to sell the two racks and the drip pan -- if you're still looking for them then.

You need a tube of permatex blue or black RTV silicone.I reglued my door about three years ago and it is still holding. Trick is to clean all parts PERFECTLY first using steel wool, a flat 4-sided file, etc.. Then clean real good with acetone (outdoors cause its explosive and toxic). After acetone dries do it again and wipe it dry with a piece of cotton jersey. Then reattach the hinge or handle sides using the silicone and tape it with blue masking tape. Let cure for 48 hours. You will have a joint as good or better than the factory joint.

I have a farberware convention turbo-oven model
The top temperature is actually 475 (which is 550 in a regular oven). That's with the dial turned as far as it goes to the left. Don't know how you'll figure out the settings for the temperatures above 350, unless you measure the intervals below 350 and mark them off on the other side some way.
Here's a picture of the dial on my oven:
Farberware Convection Oven T490c does not turn on.
It is usually one of two items that could cause this problem. You need to take the outer shell off. Lots of screws. Pull the "brain board" from the right, front of the oven. There is a relay housing. This 30 amp. relay is made by Omron. Look at the connector pins on the back side of the relay, especially the white wire that goes to the distribution block then on to the heating coil. I find that the soldered pins on the pc board next to the relay often get so hot that they 'shed' the solder. If so, simply clean well and re-solder. The relay itself can also go bad. Unfortunately, I haven't been able to obtain replacements. What I did on one oven was to buy a 30 amp, open frame relay (~$20). Mount it on the chassis near the fan. Remove the Omron relay and simply run the appropriate wires to the open frame relay. That works very well.

I have two tubo ovens. Would anyone know if they are all supposed to "ding" or "ring" when the timer goes off. My one does. Bought both used at a thrift store diff times
Model 460/5 can not control the heat
I would have to say that your issue is thermostat related. The thermostat only send a signal when temperature is reached, not what the current temperature is. So if it is malfuntioning, the desired temperature will never be reached. Therefore, not sending a signal to cut the heat, even though it is 350.
