There are a few reasons for this. One is the most obvious and that is the child lock switch needs to be engaged to unlock.Some models call it panel lock.
Turning the panel lock on and off:
To turn the panel lock on, press and hold the Panel Lock key for four seconds. The Panel Lock symbol will appear in the display.
To turn the panel lock off, press and hold the Panel Lock key for four seconds. The message in the display will disappear.
The lenses unscrew anti-clockwise, but they can be very stiff and difficult to grip. The best advice I can give you is to double or triple wrap a thick elastic-band around the lens as this will give you much better grip than you will get on the glass alone.
If you are still unable to unscrew the lens, squirt a small amount of WD40 / penetrating fluid down the back of the lens so it runs onto the threads and leave it for 15-20 minutes then try again with the elastic-band grip. Once the lens moves a small amount it will unscrew relatively easily. The constant heating and cooling of the oven causes them to lock.
Please switch off the power supply to the oven before replacing the bulb and make sure you have clean hands when replacing the bulb - grease from your fingers can cause the bulb to fail or shorten its life considerably.

It sounds like your main board needs to be replaced. They run about $250. They are not terribly difficult to do but if you have no experience with appliance repair it is not the place to start. The repair person probably saw the unit when it was working and most don't fix what does not appear to be broken.
oven has two fans. the second fan is out of sight and cools the casing. it is operated by a seperate stat. not unusual for it to run for up tohalf hour after switching off. if it runs for an excessive time may be a fault nwith fan stat

first thing I would do is check the cables that go to the clock, if they are OK then you likely have a faulty clock module which will need to be replaced.
Get some epoxy putty, grease the shaft with Vaseline, put a small pea size piece of epoxy rolled thinly and insert it into the knob where the flat part registers on the knob. Push the knob into place and leave it 24 hours to cure.

Yes, the tube is fed in from behind or above. Some thermostat bodies have a small adjusting screw to allow you to calibrate if it is fairly close. The videos show it is a simple job.
