Wiring diagram for a pro chef convection oven
could not find a wiring diagram specifically for the Pro Chef AH-798HL convection oven online. However, here are some general steps to follow to help you wire your oven correctly:

Lucky for you(?) I had to reset our clock for daylight savings and checked here before i found my manual. If you're still looking for an answer, press the + & - buttons at the same time, let go and you have 4 seconds to press the + key again to set the time
The ignitor glows but the oven will not turn on

The problem beleive it or not is that the bake ignitor is weak ,and it is not drawing the proper amprage to open the gas valve.If you have a amp meter access the wires to the bake ignitor(usually behind the storage drawer) and check for 3.3-3.6 amps when oven is set to bake by clamping the meter around ONE wire wire of ignitor make sure only one wire,either one and not both.
if amp draw less than 3.3-3.6 amps replace bake ignitor. I know it seems improbable that if the ignotor comes on that it could be the problem.Professional appliance technicians who would charge a average of $250.00 to repair your oven,have found when the ignitor comes on yet the oven won't heat that a weak ignitor is the cause 100% of the time

The problem with your oven is that ignitor is weak and not drawing enough amprage to open the gas valve, the gas you smell was since the ignitor does come on it allowed the gas valve to open a wee bit but since ignitor is weak it wont allow gas valve to open fully. I know you going to doubt that what i'm telling you is correct, i base my diagnosis on my 30 years experience as a appliance repair technician.Replace ignitor and enjoy your baked meal

The clock keeps flashing and
The clock/display flashes when the control board detects a fault and can no longer control the components of the oven. This should be followed by an error code telling you what is the failed part. If no code is present then either the board can't determine the cause of the defect or the defect is so great it has damaged the board's processor.
In that case the oven will have to be dismantled and every part will have to be tested. This is a job that only a certified repairman can do, you will have to call one. In the mean time unplug the oven from the mains.

you have a lazy ignitor,you should be able to see the ignitor glow or reflecting,if you can't see this you'll have to remove the floor or if there's a bottom draw or panel but anyway when you can see the ignitor start the oven,if it takes longer than 40 seconds to ignite the flame change out the ignitor.

If the stove is the one that I think that it is... you will have to lift the cover and then between the burners there will be a small orifice that you light... the pilot light will then light the burners when the gas is turned on to them...

Yes, you can put a piece of tempered glass from a glass dealer in place of the original piece. The advantage is that you can use a heavier piece, if it'll fit. It might cost more to go that route, because it's a custom piece- they have to cut the glass before tempering it. Just call a couple of glass people and a couple of appliance people and go whichever route you find you prefer.

the epoxy metal repair compound resin with the catalyst in a plastic
drywall pan. Stir the components for five minutes, using a plastic stir
stick.

the epoxy to scratches and holes, using the plastic putty knife. Use
