I would expect 15- 50 ohms. usually the elements are good or open infinity would be the range. inspect heating element for cracks. many times it will heat and stop as the element expands opening the circuit. good luck

If you pull the knob off there is a very little screw in there that you can turn with a small screwdriver. I believe left is increase and right is decrease, but I could be wrong. Very little turns do a lot. You can tell if you are going the right way if the burners get bigger or not. This takes a while so do a 1/4 turn and let it sit for a while, take temp and adjust again if needed.

I am a retired career chef, and had this one oven with choking CO in an airport catering kitchen. We had it serviced and it was fixed. It sounds like yours is not getting enough air mixed with the gas. Adjusting the gas is one thing but the venturi to the burners can partially block and unburned gas spills over. Remove the burner and venturi and boil it out in whatever you boil your fryers out with.
