Color calibration
Sounds like it is time to clean or replace your print head. It is also possible that the cartridge that you have is defunct. Try installing a new one. If that fixes your problem, the issue was the cartridge.
COLOR DOES NOT SHOW WHEN PRINTING
There should be an HP utility on your computer that will allow you to run a print head test. This should show you if the color portion of the printer is working. If it is then likely the driver on your computer has been set for grayscale printing only.
Scan both sides of document?
Scan one side of document, print that side. Flip document and scan, then follow printer directions for printing other side of document on first printed document.
