Standby Mode deactivates the beater and keep the ice cream cold. When you come off Standby, the ice cream warms a little and the beater starts. You can be in standby Mode as long as you like, It keep the ice cream mix in peak condition. There will be a short delay in serving the next customer.
Standby (US and Canada Only) During long no-sale periods it becomes necessary to warm product in the freezing cylinder to approximately 35°F to 40°F (1.7°C to 4.4°C) to prevent overbeating and product breakdown. When the STANDBY button is pressed, the light comes on, indicating the cylinder temperature retention system (CTR) has been activated. In the Standby mode, the Wash, Pump, and Auto functions are automatically canceled. The Mix Ref function is automatically locked in to maintain the mix in the cabinet. To resume normal operation, press the AUTO button. When the machine cycles off, product in the freezing cylinder will be at serving viscosity.
