M is for Manual Mode which allows to shoot manually adjusting the exposure settings. It gives you host of another option and as well as activates other options. https://docs.sony.com/release/DSC-H200_guide_EN.pdf As you mentioned that when you press down the mode dial it corrects itself, actually it goes back Intelligent mode. For in depth detail i am attaching a link of a pdf manual you will get all the info about modes.
You will have to download the pics from the camera to the computer and then from the computer to the phone. Be advised that camera pictures can be very large in megapixels and therefore file size. It could take a lot of phone memory unless you resize them.
