I have a pitco 12 fryer properly converted to run
If the wires on hi limit were cut and shorted, it is possible that the hi limit is bad and needs to be replaced as soon as possible because it is the safety device of the fryer.
Hi limit is designed to cut burner flame in case oil temp reached 450F to avoid further damage on life and property.
Washers need to be tightened/ replaced to correct burner alignment. It is not safe to operate a fryer with misaligned burners.

I have a gas fryer (pitco) that has no electric
The thermopile on gas operated equipment acts as small voltage generator when heated that energizes the pilot valve and main valve of the gas valve,. Without it, you will not be able to fire up your fryer.

My pitco frialator chips fryer diplaying CFG error
CFG error on controller board can be cleared by resetting the controller back to factory setting and by doing this, all program added after the factory setting will be erased so you have to reprogram them again.

Pilot light will not stay on
Try to clean the thermopile, it should be free of dirt/ soot so heat from pilot flame could be sensed better. Thermopiles generate small amount of voltage when heated properly, the voltage it creates is used in energizing gas valve solenoid coils.
Check also if the hi limit is good, small amount of voltage thermopile generates pass through hi limit terminals.
FIRE IN FLUE
There may be soot/ carbon build up inside the fire tubes that's why flame crawl all the way to flue. Also check if your fryer receives the right gas pressure and type as rated on the nameplate.
Is ther a special thermocouple
There are different thermocouples for different type of gas valve. You can order the thermocouple for your pitco fryer at www.middleby.com and look for the local service/ sales office in your at pitco website there.
When the pilot light button is released the flame
Try first to clean the thermopile. If it has accumulated soot/ carbon, it will not sense enough heat from the pilot flame to generate small amount of electricity to energize the pilot valve and main valve of gas valve.

You can find the model number at the nameplate located at the back of bottom compartment door.
"PROB" shows when fryer is
Computerboard will display "PROB" error when it could not sense resistance reading from the temperature probe sensor (temperature probe sensor is either open circuit or short circuited). Check first the temperature probe connectors, tighten loosely fitted connectors on wiring harness and computer board, then check if the wires are not damaged. Disconnect the temperature probe and check the resistance using an ohm meter. If the reading is either zero or infinite, you have to replace the temp probe.

Check if the gas valve knob is set at "ON" position after lighting the pilot. Check also it the thermopile is receiving enough heat from pilot flame and try also to tighten all wiring connections on gas valve, thermostat and hi limit. If these do not seem to correct the problem, you have to replace the thermopile.
What is the cost involved to change from gas to
I'm not sure how much will it cost to convert a fryer from propane to natural gas but you will be needing a conversion kit in doing this. Try to visit pitco website at www.middleby.com and look for the nearest distributor on your area.

Check if you have turned the gas valve knob to "on" position after lighting up the pilot. If so check for the continuity of the thermostat terminals using an ohm meter. If the thermostat is good, try replacing the thermopile, if it does not correct the problem, try replacing the gas valve. Make sure that the unit receives sufficient gas pressure and volume before doing part replacements.
