Not pulling down to temperture

The most common problem is low refrigerant (freon). If you don't have gauges to check the pressure of your refrigerant, do this: the compressor has one small line running to the coils on the top of the freezer. That small line should be hot enough to burn your finger if you touch it when the compressor is running. Also the big copper tube running into the compressor should be cold to the touch, almost freezing. If not you are probably low on refrigerant. Without gauges and the ability to buy freon, you will need to hire a refrigeration repair service to find the leak in your system, repair it and then gas it up. But there are a couple of other things to check first. Near the compressor is a radiator like set of coils in front of a fan. If the compressor is running that fan should be running too. if not, the unit won't cool. Also the radiator coils may be covered with dust or grease. You must have a good flow of air through these coils to dissapate the heat put out by the compressor.If it is stopped up, brush the dust from the front of the coils. Look inside the freezer as well and make sure the inside coils are not frozen over. Is so unplug the unit and let the frost melt off. If that is happening you may need a new timer on your drfrost system.

Freezer Unit Isn't Functioning

Inside the refrigeration system alot is goning on. You have to check the pressures low/high to determine the problem. It is easy to say that your unit needs freon but that is not always the case.
here is a list of possible problems:
dirty condenser
dirty evapoator
fans not working
defrost not working
lost of freon
bad compressor
bad compressor valves
slugging
flooding
lack of oil
super heat off
txv is stuck open/close not sensing
incompatilbe unknown freon mix...

well these are just some of the problems you can encounter. this was meant to tell not fix because each problem needs attention but hope this was a little helpful anyways

Can a traulsen commercial fridge be changed to a freezer by changing out a thermostat or a set point somewhere?

probably not. you would need to change the expansion device. You could probably get as low as 15-20 degrees but I doubt you could do much more than that without some system changes.

Traulsen freezer with intella true continuously frosting the evaporator coil and blocking the air flow?

Your defrost circuit ... should (about twice each day) gently warm up.. and remove the frost to an evaporation tray at the bottom of your FREEZER (refrigerator?)... Regardless of the design... THERE are only two reasons for excessive FROST. - massive air intrusion (check seals & gaskets) - defective defrost circuit (check defrost timer/controller)... EZ trouble to fix...Post comment reply: 7/3/2016...In general... there are only three elements to the defrost circuit: - 1st failure is usually the "timer" (in your case (other cases it is being replaced by the power control board (do remove power: line voltages present). - 2nd failure (inside ... usually atop the evaporator) is the "DEFROST THERMOSTAT" (designed the keep the heating element from getting much hotter than 55 degrees Fahrenheit, ("failing" = open.. prevents the heater element from being energized at all). - 3rd the heating element... itself goes open (usually below the evaporator (caution: line voltages on 2nd & 3rd)).Anytime you don't feel you've got this surrounded just comment me back... that sounds like the hardstart relay that energizes the start windings in the compressor . if that or more likely the capacitor fails when it is first energized the compressor will pull excessive amps and cause the overload protector to open until it cools for a minute or two.

How do I remove shelves if they are attached to tubes connected to the back inside of the upright freezer

you do not leave them alone they may have refrigerant flowing through them. look in your owners manual/instructions for more info.
