You may have inadvertently switched your projector to a different input mode, or the mhz refresh rate, etc., Jon.

RGB not aligned so I get thin red vertical stripes displaced to right of icons
If you are handy with allen wrenches, quality screw drivers, and the like, you might 'try' opening up the can of worms and gently manipulating the red LCD panel (it will be obvious--a magenta color when off), by slightly loosening the holding screws, then moving--ever so slightly, the panel untill the ghost disappears. Do not do this though, untill you mark the present position on the top and bottom of the LCD panel. Take pictures, far and close-ups, as you go so you can reassemble the unit. The typically three LCDs can be located by finding the prism cube, located under the circuit board, and just before the output lens. Be patient, and have fun. I did this with an 'out of wack' throw away, and now it is just as enjoyable as my 'dimmer' HDTV projector. Even side by side, from 8 feet away, when both are making 72" images, the HDTV is barely clearer, Jon.

Go to:
System Preferences (you can get there by clicking on the Apple Menu in the top left corner) -> Displays -> Detect displays
After you click "Detect Displays" your G3 should automatically send the display image to your projector.

Vertical control of viewing frame needs adjustment.
Did you try going into MENU --> PICTURE --> SIGNAL MODE, and then pressing > to go through all the signal modes? On mine, most of the signal modes split the screen weirdly as you described, but one of them (in my case XGA3, but I'm not using a Mac) looks right.

Snap. Why won't it turn off?
There is no such external reset buttons to modern TVs. There are two methods to reset TVs. The first is simple to do; a Hard Reset. The other is somewhat skilled; is a Factory Reset (System Reset). To make it a hard reset, just unplug the TV from AC mains wall socket, and re-plug it back after 15 minutes or so. If you do this by overnight is better. This procedure will make it a hard reset. If you want to make it a system reset [Factory Reset]; you have to enter its service mode option, and select the factory reset option. If you wish to get some details; check the site linked here. Service mode entry, adjust and exit procedure to many popular brand TVs are given. Never forget to exit the service mode, after all adjustments have been done.
