I have many years experience repairing Canon scanners so here is my suggestion for you.
In answer to your question, I would think its a setting in your software. Make sure your software is set to 8 1/2 x 11. Or a work around is do a prescan the dotted line you will see come up around your document drag the dotted lines to the edges of the document then scan you should now get a full image of your document. This is called cropping and it will work to upsize or downsize a picture or document.

By design the 5600F cannot scan negatives that are larger than 35mm. But for smaller ones it's relatively easy: just load them one at a time in the carriage and put a strip of blank 35mm film on top of them to steady them.
Later you will have to crop the image to get rid of the black border.
You can scan larger films, but that implies destroying the negatives: cut them in pieces to fit the carriage and then paste the image parts in PS.
