I can get the water to stop running from the water
If this water is coming from the pressure/temperature relief valve on your tank type water heater, and it is piped from inside to outside of the house, you could try pulling up on the lever atop the pressure/temperature relief valve and releasing it. See if it sets properly. It may have to be replaced if I understand your problem accurately.

Pilot will light, goes out when button let go,
A long time ago, in a place far away, I saw an old gas valve, might have been on a water heater, might have been off an A/C unit. I took my 10" adjustable wrench and unscrewed the coil that the thermocouple screws into. Now, when I have the problem that you describe I take the threaded end of the suspected thermocouple and put it into my spare. I light the pilot and hold the button down. Then, after a minute or two, I press the button on my spare, which now has the thermocouple attached. If the spare stays in the "ON" condition, I have just proven my gas valve to have faulted.
I suspect you main gas valve has failed, if you can find another valve, you can test as above, before buying a replacement valve.

Our five year old electric water heater has been
You should replace it as it will let go one of these days. Most water heaters have a minimum 6 year warranty, so the heater should be replaced by the manufacturer...BUT, you will have to pay for the plumber (unless you want to tackle on your own). Get the make and model off the front tag and call them, they will tell you whether it's warranteed. It's really not too tough to install if you are fairly handy. Electrical is simple too. Gas pilot wont stay on
they are universal, the only thing youi need to know is how long it should be, most will take a 30inch, just to make sure you have enough, our oyu can take the one out that you have and match it up, the one you take out will actually measure a little shorter then the new one which is ok, just make sure you put the burner assembly back in the perch correctly, if not you will have bigger problems then you want to have
Pilot goes out when dialed back to on
no I dont think you have a mother board. If there wasone it would be in a box of some sort on the top or right near the top mounted on the side.
If you replaced the coupler, I would say the gas valve is bad. Go to you local supply store and get a new valve. you should have 3 connection on the valve, the main gas feed and the main burner and your coupler.
Make sure you turn off the water at the main, drain it all down and when you have all the connection moved get a large channel lock or pipe wrench and turn the valve counter clock wise use tape or dope on the section that goes into the tank and tighten it up, hook up your other pipes and test for gas leak with soap and water.
Make sure when you buy the valve you get a match to the kind of gas you have natural or L P one will not work with the other.
OH check for gas leaks
Best of luck Tom

The pilot is ok.the main burner does not come on
First check and see if the dial on the gas valve is on the ON position. Next turn the thermostat up all the way.if it does not come on then, this sounds crazy, but, tap the gas valve twice lightly with the back end of a screw driver, sometimes a spec of dirt can clog the gas valve and this releases it. if it still doesnt come on, you need a Volt Ohms meter or multi meter, set the meter to millivolts, you want to connect the 2 leads from the meter to the terminals on the gas valve that the 2 wires from the pilot generator, located next to the main burner underneath tank. turn the meter on and the millivolts should read a minimum of 400 milivolts, if lower, replace pilot generator. If still doesnt work, replace gas valve.
