We have an older Bosch Oven (maybe circa 2010), and the way to access the special settings is to hold down the "Temp" button for 2 seconds which reveals a hidden menu of goodies. I made two changes in there--changed it back to 12 hour instead of military time as well as disabled the annoying beeps every time you press a button.
