the start button is bad, and needs replaced.

Could be a problem with the start windings.or start switch.maybe a capacitor .on the older models the start switch sticks just needs freed up and contacts on start switch cleaned.

The best thing I can point you to is HobartCorp. website you will have to become a new member it is free. Once you have become a new member you will want to log into spec sheets, type the model number D300, at the bottom of the page that pops up it will show parts catalog this will give you a blowup of all the gears and how they go together. Putting one of these together is not easy you may need to find some one to help you.

As the machine is mixing dough it seems that it is getting sluggish. This is caused by the machine being over loaded. Although it is a 30 qt mixer that is for liquid filled capacity. I do not know what kind of dough you are mixing so I will give you a light to medium dough and then the heavy dough capacity. Also on this machine all dough should be mixed in speed 1 or low to keep from damaging the machine.

You will need to know the Absorption Rate (AR) of you dough, to find this you take the weight of the water divide the weight of the water and multiply by 100.

AR = Water Weight / Flour Weight x 100%

The higher the percent the higher the capacity the lower the percent the lower the capacity. Also the temperature of the water will have to be considered as the colder the water the harder the dough it is to mix the dough the batch should be reduced by 15% to 20% for water temperature between 65-75 degrees.

For a Light to Medium dough with a 60% AR the unit capacity is 45 pounds in first speed.
For a Heavy dough at 55% the units capacity is 30 pounds in first speed.

The above capacities are for bread doughs, if you are doing pizza dough, dough nut dough or wheat dough please post back to this thread and I will help you to find the capacities.

Is it a problem of the motor not starting, or does the motor start but does not mix?

If the motor starts, then you've either broken a gear or a key inside the transmission from overloading it, or stripped the brass worm gear (also in the transmission).

If the motor doesn't start, I'd say you probably burned out part of the motor starting circuit if the motor was overloaded severely enough to re-engage starting components.

This mixer's gearbox is definitely not made to operate that way, and it is inadvisable for you to try to do so. Noone will be able to tell you that information, as I can't imagine too many people in the world have ever tried to modify the gearbox in this method.

Could be a bunch of different things. Depending on how old the mixer is, brushes at the back of the motor. If the brass armature is worn down I have been told its too expensive to replace. They haven't used brushes in 25 years. There are a number of bearings that could be going bad. If the main bearings at the back housing or at the gearbox are badly worn, they may be letting the armature come in contact with the windings. If that is the case the motor will be really hot when running. One obvious question is do you have the proper lubricant and have enough of it? Remove the top cover then pop the inspection hole cover off with a screwdriver. The grease inside should be the consistency of heavy wheel bearing grease. If you had a slug of it on a tablespoon it would stay on it if you turned it upside down. It is a food safe grease available at Hobart parts stores. If the lubricant is thin like motor oil, it is totally worn out and is probably not lubing your bearings at all. One other thing to look at is capacitors. A capacitor looks like a large flashlight battery shaped black object with two wires running from one end of it. It is usually located behind the mixer bowl behind a plate held on by two screws. If your mixer has a "run" capacitor, it may be bad. Remove it and head for WW Graingers or such supply house. Get a capacitor of exactly the same voltage and microfarads. Hook it back up and give it a shot.
Back to the bearings. The main motor shaft should have no play at all if you try to wiggle the shaft up, down or sideways. If it does, the bearings are available at industrial supply houses and are not realy hard to replace if you go slow and have a lot of patience in taking things apart and keeping them in the proper order to reassemble.

Transmission uses #0 weight grease, best to get direct from Hobart (their grease is the correct weight and approved by U.S. FDA & USDA as safe for use in food equipment) but if you insist on not doing so, at least obtain an Extreme Pressure #0 grease and don't overpack the transmission, I believe it should have 35 oz. if memory serves right.

Uses a heavier grease for the planetary gear, use #2 weight. Don't need much, just a light coat on the planetary gear.

Bowl lift rails use medium weight oil, again use food grade oil supplied by Hobart.

They are mainly for removing seeds from fruits and vegetables.

sounds like you have a sheared key in one of the gears. which speed is it slipping in or is it all 3speeds

Go to this page and click on Hobart Smartparts System. Select Food Machines, Floor Mixers, D300 and you will eventually find parts breakdowns.

A thermal overload is an option on the D300 and is self resetting. Assuming your machine is being operated at it's full rated voltage, you might have to cut down on the amount of dough you are mixing. If I recall correctly, the relay and overload is located in the base or behind the speed selector plate.
