It starts fine. ticks over fine and will rev fine until your out on the road
then it starts to cut out then high rev and so on. will not stay at the same revs or speed

Just check on your air ducts. When the bike is staionery it will idle rev and even run well on the dyno, but on the open road the airducts must be in and instadled or mounted correctly

You need to tunes up the carbs. The small jets in the carbs can easily run at idle when partially clogged but can't sustain a high rev without bucking the bike.
Sounds like something has clogged one of the pilot jets in the carburators. You can figure out which one by feeling which pipe is cold after running for a short time. Probably best to clean all 3 carbs while you have them off.
clean carb and if that doesn't do it replace crank seals it's sucking air in the crank seals causing it to run lean and starv for fuel, also a good indication is does it rev high where you cant get it to idle down , then when you do it is erractic
I can assure you it wont be leaking oil, as the only oil it uses is mixed with the fuel.
Lock throttle trigger on, Start on full choke till it fires, Switch to half choke and it should fire up on high revs, Blip the throttle and it should turn to tick over.
If it still keeps cutting out it could point to a carb or fuel takn issue.
