The engine seems like it is partially seizing up,
Looks like a nice older ride, verry nice!
Remember older rides are not liquid cooled or oil cooled. They are Air Cooled, so they tend to ride hot in traffic, and more so in the summer time. This might explain some of the sounds you hear comming from the engine. The oil minght be to thin in viscosity, when it get too hot. Try a 20/50 oil especialy if you have miles on her. Another item to take into cosideration is the fuel. Octane, helps keep the temp down a bit. The higher the octane the cooler it runs, and performs better. Most bikes like 91 or higher (Try not to go over 103). Change the oil and the filters on a regular baisis. If problemm presist let me know. I might be able to help with the oil flow check. It gets a bit complicated but not imposible to check yourself.

Remove carbs and make sure all of the fuel inlets are seating properly. you should probably clean them good and set all the floats while you have them off.

You may be referring to (if I remember correctly) the Califia fairings that were sold as Yamaha OEM back around 1980. If you need parts now you know where to look. Many times you can make or find adapter plates to mount a Califia fairing on a windjammer mounts , etc. The fairing will fit on any motorcycle you just have to adapt the mounts to fit and wire it to your harness.

It could be the switch.( i assume you have tried new bulbs)
check the wires coming from the switch are all connected in the headlight. The indicator wires are color coded, the same color wire should be coming from the switch block, as what goes to the indicators.
You can check with a automotive test light to see you have a live wire when it is switched left.

The starter clutch needs to be replaced. At the other end of that chain is a wheel with a couple slots cut at angles. Inside each of these slots is a small cylindrical piece of metal. The whole unit fits over the end of the crankshaft and because of the angle of the slots those cylindrical pieces of metal (which move freely in the slots) will be forced against and grip the crankshaft when the starter is operated. If they become worn down they are no longer able to exert enough pressure on the crankshaft in order to turn it. Buying a starter clutch 2nd hand is not recommended. If you are unable to source one from a bike shop, try and have them made. Take the old ones to an engineering shop. Unless you know how to temper/harden metal of course.

Clutch engagement problem
my gess is you have the throtle cable to tight and the cluch cable is crossing over it,,,so every time you dip the cluch it opens the throtle as well by pressing on the throtle cable,,, its common for this to happen
check all your cables and if you need to to stop it happening again tape them together,,,,
How do i begin adjusting the carbs?
1st-clean air filter and oil,fresh plugs,good fuel,valves adjusted correctly,check for tears or cracks in intake boots,fire in all cylininders;minimum compression & w/in10% of each other in all cylinders, and no exhaust gasket leaks. once these components are w/in specs. and operable the carburators can be adjusted, as long as they are internally clean and operating as designed.1st- set high idle, then set idle rpm, now synchronize vacuum on carburator set,now readjust idle rpm.
