It runs a 195 degree thermostat, not to worry, normal operating temp.
Gm says they are more "GREEN" when the temp is up,can't change the thermo to a 180 because the computer is set for 190 to let the fuel trim from the o2 sensors to help with mileage
You may find it runs cooler with the AC on due to the electric fan running.

I don't understand why my 97 Taurus antifreeze Reservoir is running at 200 degrees or better with a 195 degree thermostat.

That is normal, just because the thermostat is 195 that has nothing to do with it reaching a higher operating temperature. 195 is the minimum before the stat closes to heat the engine up.

Thermostadt was stuck open replaced thermostadt now it runs just a little hot

Yes, try a 180 thermostat, with a 195 the fans will not turn on until about 210.

2000 Chevy Silverado normal operating temp is 210 , recently temp rises to 250. Its been this way for a few days, common operating temp is around 240-250 now, but does not overheat. Coolant levels are...

250 TOO HOT FOR ENGINE AND TRANSMISSION. SOUND LIKE COOLING FAN CLUTCH BAD ITS FREEWHEELING NOT LOCKING UP TO DIRECT DRIVE TOO COOL ENGINE OFF BECAUSE THE FAN CLUTCH THERMOSTAT NOT WORKING THE HOT SILICONE OIL CAUSE IT TO EXPAND TO PUT RESISTANCE ON CLUTCH TO PUT DRAG ON FAN CLUTCH CAUSING IT TO LOCK IN GIVE IT DIRECT DRIVE.I WOULD STILL REPLACE THERMOSTAT AND RADIATOR PRESSURE CAP IF TEMPERATURE STILL 250 DEGREES YOUR RADIATOR AND COOLANT SYSTEM NEED FLUSHING.

Engine gets very hot about 200 f

200 -210 (f) is normal operating temp...your thermostat does not even open till it reaches 195 degrees. With a good pressure cap and 50/50 antifreeze mix you are in no danger at all of an overheat at that temp.

New water pump, bypass hoses on a 2002 buick lesabre, but vehicle still runs between 200 and 209 degrees! Is it normal for the temperature to fluxuate in that range or is the thermostat bad??

The thermostat for that vehicle should be a 190 or 195 degree rating. If your temp is moving up and down by only 9 degrees then the thermostat is probably ok. You might check your coolant level and make sure that it is at the proper level and that all of the air has bled out of the system. Do this when the vehicle is cold and never open a coolant system on a vehicle when it is hot.

What the normal temperature operating range indicated on the temp gauge?

195 degrees is the typical high end on the thermostat (when the thermostat opens), so the temp gauge should read a max of 195 degrees, give or take a few degrees. Some people replace their thermostat with a lower temp one, such as a 180 degree one. Then the gauge will read lower (approx 180 degree max). So the range is typically from cold at start to just under 200 degrees.
