Quite possible you have a bad ignition coil. As coil heats up it breaks down and will not return to normal till it cools down. Check for spark the next time this happens. If spark is weak or not there, it warrants testing or replacement.

Review the Jeep ZJ Repair Manual in the Firing Order (page 10 and 11) for 4.0L 6-cyl and 5.2L 8-cyl.

Have you had any issues with your keys/ignition?
I have a Cherokee and a Wrangler. The Cherokee's ignition switch started getting flaky a while back. Sort of doing what you describe.
On mine, engine would die, dash lights out, like the ignition was turned off.
I'd give the tilt a bang and everything was back to normal. I got a replacement at a junk yard for $5.00.
The key symptom is, do the dash lights go out when the engine dies?
If not, disregard.

It may be the brain of the jeep. if they get condensation in them from the rain , they can act as you described. It is only about a $30 part @ Pep Boys. It looks like a box with 2 or sometimes 3 plugs coming off of it and it plugs up to the wiring harness, and it mounts on the firewall or the inside fender-wall of your jeeps engine compartment.
