At higher speeds, when I push on the accelerator to accelerate the car will not increase in speed yet the rpm's while rev very high. Today it happened when I was climbing a hill and I noticed a very strong burning smell after that

If you have a manual transmission , its likely the clutch
is toasted , if automatic , smell and look at the color
of the fluid , burnt smell , dirty red?
Likely a clutch band/s , burned up.

350 V8..revs itself and idles at higher rpm..tap excelerator and goes down to normal

if it is a carby engine then check the settings of the automatcic choke and the throttle cam screw settings
it works in a manner so that when you press on the accelerator the automatic choke flips a cam around and the idle speed screw rests on that cam giving a high idle speed until the engine is hot enough not to need a choke at which point the cam is held clear of the idle screw
if efi engine run the fault codes to check for problem accelerator position sensor or throttle position sensor.

My dodge grand caravan today threw a 700 engine code transmission module, car wont go over 25 and only has powered acceleration for first 5 seconds car is on.

700 is a generic transmission code. It went to limp mode, that's why it drives like it does. Have the codes read with a newer /better code reader or a scanner. Find out what other codes are in there.

I have an 03 Jeep Grand Cherokee v6 2x2 with 170k... I'm having a couple of issues... 1. Occasionally will have trouble with cycling through gears when getting on Hwy causing decreased, sluggish...

I would consider changing the vehicle speed sensor. When they go bad, they can really throw out a lot of bad data to the computer, resulting in unexpected behavior like you're experiencing. They're only around $20-$25. I hope this helps! :)

run the fault codes
could be a transmission actuator problem as it senses vacuum changes when moving the accelerator and tries to change ratios ( 2000 to 2500 rpm indicates a ratio change which is the speed increase momentarily until the Transmission range sensor puts it back in the correct ratio for the road speed
check the wiring to the transmission
it is a sensor problem not a transmission failing
