You need to have the transmission inspected. If it has over 60,000 miles on it and the fluid in the transmission has never been changed do that first.

sounds more likely to be a warn sensor could be cam or crank sensor, its not being able to read engine speed to adjust time.

just add to the cold line when cold... when the car warms up the water will rise close to the top with out overflowing.. And on a side note.. engine "jerking" can radiator capacity have almost nothing to do with wach other unless you have a blown head gasket..

That sounds like solenoid problems if this is an electrically controlled transmission. Fluid and filter change will likely NOT fix this. Flushing and filter change is preventive, not repair. Is the check engine light on? If so, rent a scanner and read the code(s). It should point out problems with transmission control. You likely need the services of a good transmission repair facility (many penny!).

Drop the fuel tank and replace the fuel pump. Filter is attached to the fuel pump. Sounds like the fuel pump is failing.

clean mass air flow sensor check for mil light

Does the jerking feel like a fish bite ( especially when pulling a hill?) if so it may need plugs and wires

if you have one bad plug wire the problem seems to smooth out at higher speeds
