2005 Caravan, what engine? Has oil been changed lately? Is there any problem with performance, such as stalling, stumble, hard starting or anything abnormal happening?
You may have oil in the pan but that does not mean you have oil to the lifters, rods, etc. It sounds as if the oil pump has gone bad and not enough pressure to keep the lifters filled. To try an easy solution, change the oil filter. There have been occasions where the filter plugged up, there is a bypass to let oil through, but it is not the same as a good filter. If the pump is good it will fill the new filter in 30 seconds or so.
When the car idles down where it almost stalls then the oil pressure does go down far enough to trigger the Light. Probably not an oil problem at all. A bad O2 sensor may cause a bad running car. A dirty MAF sensor will cause a bad idle too. You need to get the Code off the Check Engine light
I had same problem, it was bad battery. Also may want to check the ground, I also had that problem. Which can cause these types of events. Though you may have a mechanical problem. So next time check engine light is coming on. Take it to local autozone. They can check the codes for you for free. Then that will give you/us much better information to go on.

It sounds like the torque converter clutch. Just unplug it. It is the square 4 pin plug on the front of the transmission. Once it is unplugged and you get it unlocked, it will be fine. Just leave it unplugged, it won't hurt anything.
