I have same problem with 1996 chevy vortec 5.7. Runs great at idle and super at gradual acceleration. At full throttle the engine revs to high RPM's but does not accelerate. There is no poping or bucking just high engine RPM. If i accelerate gradually it gains speed smoothly and runs fine.

just about all cars with a computer have a rev limiter so you don't over rev it spinning a engine without a load is more harmful then with one this is normal
Look for a vacuum leak (lines and intake), Is the engine light on, were any codes present? A faulty EGR or IAC could cause the problem too. Check the throttle cable for any restrictions.
